Established in 1987
The Cluver family bought the De Rust farm in the Elgin Valley in 1896, originally to provide summer grazing for their livestock. For decades the property served as an apple and pear farm, part of the broader Elgin fruit industry that made the valley famous. It was Dr Paul Cluver -- a prominent Cape Town neurosurgeon -- who saw a different potential in the cool highland climate. In the mid-1980s he planted the first vines, and in doing so established the Wine of Origin for the entire Elgin region. Paul Cluver Family Wines was formally founded in 1987, becoming the first winery in Elgin and the catalyst for what has since grown into one of South Africa's most exciting cool-climate wine regions.
The gamble paid off spectacularly. Elgin's climate, with its high rainfall, cool temperatures and slow ripening conditions, proved ideal for Burgundian and Germanic varieties. Today the estate is especially celebrated for its Chardonnay and Pinot Noir, with Riesling, Sauvignon Blanc and Gewurztraminer rounding out a portfolio that would feel at home in Burgundy or Alsace. The flagship Seven Flags Chardonnay and Seven Flags Pinot Noir -- named for the seven flags once displayed by the family at the farm gate -- represent single-vineyard selections from the estate's finest blocks and are among the most acclaimed wines in the Elgin appellation.
Winemaker Andries Burger, who married Paul Junior's sister Inge Cluver, leads the cellar. The family connection runs deep: Paul Jr, Inge, and sisters Karin and Liesl all work in the business, making this a genuine fourth-generation family operation spanning over 120 years of farming. The wine estate forms part of a 2,000-hectare holistic farming enterprise called De Rust Estate that includes vineyards, apple and pear orchards, a Hereford cattle stud and eco-tourism activities.
Dr Paul Cluver also masterminded and built the estate's forest amphitheatre -- an open-air concert venue nestled among tall ghost gum trees that seats 600 people. It has become one of the Cape's most enchanting performance spaces, hosting concerts throughout the summer season beneath a canopy of leaves and starlight. The estate restaurant serves seasonal cuisine using local ingredients, and visitors can explore mountain biking trails and walks through indigenous forests on the property. The Village tier offers an accessible entry point for first-time visitors, while the Estate range represents the core expression of Elgin terroir. Paul Cluver Family Wines stands as both the pioneer and the benchmark of Elgin winemaking -- a place where a neurosurgeon's vision created an entire wine region, and where four generations of family stewardship continue to prove that cool-climate South African wine belongs in the conversation alongside the best of the Old World.
