Established in 1995
The land that is now Dornier Wine Estate was first claimed by European hands in 1694, when Jan Jac Van Dyk founded a farm in the Blaauwklippen Valley at the foot of the Stellenbosch Mountains. For three centuries the valley served fruit farmers and cattle grazers. It took a German artist with aviation in his blood to see wine country where others saw orchards.
Christoph Modeste Dornier was the youngest son of Claude Dornier, the legendary aircraft engineer whose flying boats and heavy bombers shaped twentieth-century aviation. But Christoph's passions lay elsewhere — in art, architecture, mythology, and wine. He was drawn to Stellenbosch and to the mystical qualities he found in winemaking: its symbolism, its beauty, its slow transformation of earth into something transcendent. In 1995 he purchased the first of four farms that would eventually comprise a 180-hectare estate with 40 hectares under vine, and set about converting former fruit and cattle land into vineyards.
For fourteen years Christoph Dornier worked on his vision, supported by his children, building what he imagined as a landmark estate unlike any other in Stellenbosch. The iconic modern cellar — a striking 500-ton-capacity facility at the foot of the mountain — reflects his passion for architecture, while the estate's colourful aesthetic reveals the artist's eye that guided every decision. The first Dornier wine was released in 2002, and in the years that followed the estate earned a reputation for Cabernet Franc, Cabernet Sauvignon, Chenin Blanc, and elegant Bordeaux-style blends.
In December 2020, Jan Rupert and Sons acquired Dornier, ensuring continuity and investment for the next chapter. Winemaker Phillip Van Staden, who joined in October 2015, leads the cellar today. The wine portfolio is structured around three tiers. The Cocoa Hill range offers accessible everyday wines — Chenin Blanc, Sauvignon Blanc, Rose, and a Red Blend named for the chocolate-toned soils of the upper slopes. The Dornier range delivers estate-grown single-varietal and blended wines including Cabernet Sauvignon, Merlot, Cabernet Franc, and Syrah. At the summit, the Donatus Red — a blend of Cabernet Sauvignon and Cabernet Franc — is the estate's flagship, regularly earning high ratings and cementing Dornier's reputation among serious Stellenbosch collectors.
The Bodega restaurant, housed in a carefully renovated nineteenth-century Cape Dutch barn with thick stonewalls and gables, served contemporary farm cuisine focused on seasonal ingredients and free-range meats paired with estate wines. The 200-year-old heritage building provided a mellow setting for languid Stellenbosch lunches against panoramic mountain views. The estate welcomes families, with a 4.5-star Google rating across 231 reviews, cellar tours, and a gift shop stocking wines and Dornier-branded merchandise. Tastings range from R50 to R180, making the estate accessible across budgets.
